My name is Anthony Santi, and I am the new Director of Food and Nutrition at Colorado Military Academy. I am recently retired from the U.S. Army as a First Sergeant, and served in many food service leadership positions throughout my 20-year career. In addition to my military service, I earned my degree in Culinary Arts from Western Culinary Institute (Portland, OR) in 2002, and received my “Certified Executive Chef” certification through the American Culinary Federation in 2014. Food is my passion, and sustainability and purchasing local products go hand in hand with my food service principles.

As we begin the 2024-2025 school year, many changes will be evident in what your students will be eating. Our primary goal will be to phase-out processed foods, and move to 100 percent “in-house” made products, using the freshest available ingredients from local Colorado farmers. Wherever possible, we will eliminate canned goods and products using unnecessary preservatives and dyes.  We have been approved for a Local Food Program grant that will enhance our ability to provide the healthiest and freshest ingredients to our students, and provide parents and staff with information on the farms where these products are grown. We will also be increasing the options available to the students to include daily soups made from scratch, healthier salad options, and breakfast items such as homemade granola. Lastly, we will be adjusting serving sizes to ensure all of our students are provided the portions required to get them through the day.

In addition to healthier ingredients, we will move to a zero/low waste initiative. Styrofoam trays, bottled water, and carton milk create massive amounts of unneeded waste. Starting in SY 24/25 we will begin the use of traditional trays and cups, and moving to dispensers for water, milk, and juice. Food waste will be composted and used in our very own gardens, which are cared for by the CMA Gardening Club. Making these changes will provide us with opportunities for future grants that will further enhance our ability to provide better meal options for our students.

Our goal for this upcoming school year will be to provide the most nutritious, freshest meals possible to our students, and it is a collective effort. Please feel free to reach out to me directly as questions and concerns arise, and I will address them to the best of my ability. Our goal is to provide CMA students with the fuel needed to keep them active in the classroom throughout the entire day, and feedback is essential to success.
